CHIMICHURRI SAUCE
Ingredients:
1 cup chopped fresh parsley
1/2 cup chopped fresh cilantro (optional)
4 cloves of garlic, finely chopped
2 tablespoons chopped fresh oregano (or 1 tablespoon dried oregano)
1 teaspoon ground chili (or a pinch of chili powder, optional)
1/2 cup red wine vinegar
3/4 cup extra virgin olive oil
Salt to taste
Black pepper to taste
Preparation:
1. Finely chop the parsley, cilantro (if you decide to use it), garlic and oregano.
2. You can use a food processor to chop the ingredients faster, but be careful not to puree them.
3. In a large bowl, mix the parsley, cilantro, garlic and oregano.
4. Add the ground chili, salt and black pepper to taste.
5. Pour the red wine vinegar over the herb mixture.
6. Little by little, add the olive oil while mixing well so that all the ingredients are integrated.
7. Taste the sauce and adjust the amount of salt, pepper or vinegar according to your taste.
8. If you prefer a spicier sauce, you can add more ground chili or chili powder.
9. For the flavors to mix well, let the chimichurri sauce rest for at least 1 hour before using it.
10. You can store it in the refrigerator in an airtight container. Chimichurri sauce keeps well for several days and its flavor improves over time.
